1/2 liter of whole milk

1/3 cup Makhana (lotus seeds)

1/2 cup of sugar

1 tablespoon of ghee

1/2 teaspoon saffron threads

1 teaspoon of cardamom powder

1-2 peaches / mango diced

1/4 cup bread croutons

1/4 cup apple diced

1/4 cup pomegranate pearls

2 tablespoons of chopped pistachio

In a pan, heat the ghee and toast the lotus seeds for 5 minutes.

Pulse in a blender once to make a coarse powder. Stay to one side.

Soak the saffron threads in a tablespoon of milk and set aside.

Take the milk in a heavy-bottomed saucepan. Add the saffron threads and the cardamom powder.

Boil over low heat. Keep stirring at regular intervals.

Once the milk is reduced to half the original amount, add the lotus seed powder.

Let the milk simmer until it thickens and stir at regular intervals.

Add the sugar, simmer the phirni for 2-3 minutes, then turn off the heat.

Let the phirni cool completely. Store in the fridge until ready to serve.

Arrange it in the serving glasses. Layer croutons of bread, nuts, and fruit.

Serve Phirni Parfait chilled.
