It’s also wonderful to be able to combine fun, hands-on playtime with meal prep time. My kids love helping me make gnocchi almost as much as they love eating them!

1 small sweet potato
1 1/2 cups of flour
1 beaten egg yolk
1 1/2 teaspoon salt
Butter
Parmesan

Website design By BotEap.comHeat your oven to 375 degrees Fahrenheit. Bake the potatoes until tender. let’s chill Scrape the pulp onto a clean, dry area. Add the flour, egg and salt and mix with your hands until the dough comes together. Knead lightly. Separate the dough into 5 balls, then roll the balls into ropes about 28″ long. Cut each rope into ¾” to 1″ pieces. You can gently roll the pieces with a fork to create grooves. Cook the dough in boiling water , when they rise to the surface they are ready, mix with butter and Parmesan cheese and enjoy!

Website design By BotEap.comChildren can knead the dough and roll it into long ropes. The strings cut easily so you can give the kids safer type plastic knives or a rolling type pizza cutter. You can also top with your favorite sauce or try this easy, quick and delicious flavored butter sauce:

5 tablespoons olive oil
1 teaspoon dried basil (or 4 tablespoons chopped fresh basil)
1 TBS minced garlic

Website design By BotEap.comOn LOW heat, simmer all ingredients to bring out the flavor of the garlic and basil. Add the gnocchi when they are done cooking and toss gently then top with Parmesan cheese.

Website design By BotEap.comHere’s an easy dessert that kids can make too. It does require the use of an electric mixer, so adult supervision may be required, but it’s an easy and forgiving recipe, so a little extra peanut butter or sugar won’t hurt. Very kid friendly!

1/2 cup peanut butter (we like it creamy)
1 cup powdered sugar
8-9 oz non-dairy whipped topping thawed
1 chocolate cookie cake batter

Website design By BotEap.comMix cream cheese and peanut butter with a mixer. Add the sugar and milk and mix some more. Then add the non-dairy topping and pour into the crust. Freeze it for at least 3 hours, then enjoy! Warning: This is so good you might find yourself hiding it from the kids!
