Many other people have never even used an electric knife and don’t understand why they would want one. In short, electric knives are far superior to standard knives for a wide range of purposes. It’s not unusual for someone to have a blender and a food processor. They are used for similar things, but each have their strengths and weaknesses. There must be two blades because the simultaneous cutting motion in opposite directions gives electric knives their best feature: the ability to cut food without damaging or deforming it. Consider every time you’ve tried to carve into a stuffed meat only to have the stuffing start to spill out. Consider every time you cut into a piece of cake and ended up with a slice that was so mangled it was barely recognizable as a piece of cake. Those things happen because you have to push or pull on the knife and at the same time press down. Having two blades in opposite directions means you only need to press down, and not as hard.

Either you need to find a model with a cord long enough to reach every corner of your kitchen (or dining table, if you plan on cutting ham or turkey at the table) and risk becoming entangled in it, or you’ll end up with a knife that you can only use in one place. The solution is the cordless knife.

This is something you’ll need to investigate from model to model, unfortunately it’s not something you can tell by looking at the unit itself. If you check consumer reports or even YouTube, you’re likely to find some solid advice on which current models are worth avoiding and which work well. A good cordless knife won’t be cheap, but it will last you and make your life in the kitchen a lot easier.
